Roasted New Potatoes w/ Lemon & Thyme

Here is a super simple yet impressive side dish that’s easy to prepare with a few basic ingredients. I love whole roasted new potatoes they go lovely and crisp on the outside and warm and fluffy on the inside.

Topped with the tang of lemon zest and aromatic thyme this simple recipe is perfect for a festive celebration. If you can find nice small new potatoes cut bigger ones evenly in half.

Preparation time: 55mins
Serves 4-6 as a side

  • 1kg (2lb) new potatoes, scrubbed
  • 3 tbs olive oil
  • 1 tsp fresh cracked pepper
  • 1 lemon, zest
  • 2 tbs fresh thyme leaves
  • 1 tsp seas salt flakes

Pre-heat the oven to 220°C/428°F

Gently boil the potatoes in a large pot for 10 minutes or until just tender.

Pour 2 tablespoons of olive oil into a large roasting pan and put into the pre-heating oven for a few minuted to warm the oil.

Drain the potatoes well and carefully layout on the warmed roasting tray. Sprinkle with the cracked pepper and drizzle with a little more olive oil.

Roast in the oven for 45 minutes, turning once or twice to allow the potatoes to roast evenly.

Once the potatoes are golden and crisp, remove from the oven and arrange on a serving platter or in a large serving bowl, toss through the lemon zest, fresh thyme and sea salt flakes and drizzle over any extra pan juices.

Serve immediately.

I LOVE roast poatoes. LOVE them. So does my boyfriend and he regularly asks me to make them. I’ve never tried adding lemon zest to them. I can imagine how good it would taste though. Yum!

Lemon and thyme are one of my favorite combinations for potatoes! Love this side dish!
