Fresh Salsa

Salsa is a classic side dish. Fresh and zesty it is the perfect accompaniment to a huge variety of meals. Always use fresh herbs and as much chilli as you can handle. De-seeding the cucumber and tomatoes eliminates a lot of excess liquid and I always try and make the salsa about 30-45 minutes before hand to let the flavours develop. Enjoy piled on top of quesadillas, in tacos, with eggs or as an accompaniment in your favourite spicy feast.
Preparation time: 5mins
Serves 4 as a side
- 3 tomatoes, de-seeded and diced
- ½ large telegraph/continental cucumber, de-seeded and diced
- 1 red chilli, diced
- 2 tbs fresh coriander (cilantro), roughly chopped
- 2 shallots/spring onion, diced
- 1 juicy lime
Combine all ingredients in a bowl; squeeze over lime juice and season with salt and pepper. Toss well to combine and it’s done!!
