Pancakes are total indulgent food and great for a special breakfast or brunch.
For delicious and beautiful looking summer pancakes I stacked the classic pancakes found here with colourful fresh fruits. Pancakes are a great base for a wide variety of flavour combinations; try using whatever fruit you fancy and add lemon, maple syrup, honey and/or natural yoghurt to top it off!!

Preparation time: 10mins (not including pancake cooking time of about 30mins)
Serves 4
- a batch of classic pancakes; recipe found here
- 1 orange, sliced into rounds
- 3 bananas, sliced diagonally and sprinkled with lemon juice
- 1 punnet of blueberries
- maple syrup
- creamy natural set yoghurt
- fresh mint leaves
Spread each pancake with a little natural yoghurt.
Stack the pancakes 3 high with banana pieces in between; you can also add a little brown sugar to the bananas if you like.
Top the stack with two slices of orange, a good dollop of natural yoghurt and scatter with blueberries; drizzle with maple syrup and finish with mint leaves.
Serve immediately while still warm!!! Om numnum num!!!
