Preparation time 30-35mins
Serves 4
- 250g (9 oz) Penne Pasta
- 1 tbs olive oil
- 3 cloves of garlic
- 1 tsp crushed chillies
- 1 250g (9 oz) punnet of cherry tomatoes, halved
- 2 tsp brown sugar
- ½ tsp cumin powder
- 1 tbs tomato paste
- 400g (14 oz) crushed tomatoes
- 4-6 vegetarian sausages
- 150g (5 oz) vegetarian feta cheese or soy cheese, diced
- 4 sprigs fresh thyme, chopped
- salt & cracked fresh pepper
Cook the pasta according to packet instructions in a large pot of rapidly boiling water. Rinse well and set aside.
Heat the oil in a medium sized fry pan; add the garlic and chilli and cook 1-2 minutes until fragrant and garlic is soft. Add the cherry tomatoes, brown sugar and cumin powder; cook for 3-4 minutes until tomatoes begin to wilt and soften.
Add the tomato paste and crushed tomatoes, turn down and simmer gently for 20 minutes until reduced and rich in flavour. A little water may be added if sauce reduces too quickly.
While the sauce is simmering cooked the vegetarian sausages in another fry-pan until brown and cooked through; set aside to cool slightly and slice diagonally.
Once the sauce has reduced; combine with the pasta in a large pot; add the sausages and toss well until pasta is warmed.
Add the feta or soy cheese and thyme and season with salt and pepper; toss quickly for a minute until the cheese has just melted.
Serve immediately with a light side salad and crusty bread on just on its own… num num nummmmm
